Avocado and Red Beet Spread

High-quality food does not have to cost an arm and a leg, does not even require great cooking skills, and still can taste very delicious! Like these two colorful healthy friends. Red beet and Avocado are rich in nutritional value and if you add a few more healthy friends both become superfoods!

Studies claim red beets and red beet juice can reduce blood pressure, improve digestion, and lower the risk of diabetes.

One cup of raw beets provides us with 58.5 calories, 13 g of carbohydrates, including 9.19 g of sugar, 3.81 g of fiber, and 2.19 g of protein. Also, they provide us with Folate, Vitamin C, Phosphorus, and a small amount of Vitamin A. (See USDA 2015-2020 Dietary Guidelines).

There might be as many types of avocado as there are ways to eat them. Avocados have so many health benefits, they are a nutrient-dense superfood that contains vitamins, minerals, and fiber. Unlike other fruits, avocados contain very little sugar but are a rich source of monounsaturated fatty acids. Oh, and yes avocados are very delicious! They are already a superfood but if you combine them with other healthy ingredients they become a delicious healthy team! We love avocado spread on bread, on salad, with veggies, in tacos and wraps, as a dip with potato chips, even with French fries. There are endless ways to eat avocados and beets.

Ingredients

  • Red beet spread:
  • 1 red beet- peeled and cut
  • 1 green onion
  • 1/2 cup kale
  • 1/2 cup chickpeas
  • 1 clove of garlic
  • Onion salt, pepper, chili to taste
  • 1 Tbsp vegan yogurt (or a slice of tofu).
  • Blend all ingredients in a blender until desired consistency.

  • Avocado spread:
  • 1 ripe Avocado
  • 2 artichoke hearts
  • 1/2 cup fresh cilantro
  • 3 walnuts
  • 1 Tbsp sunflower seeds
  • 1 Tbsp hemp hearts (optional)
  • Onion salt, pepper to taste.
  • Blend all ingredients in a blender until desired consistency.
  • Tip: Garnish with sprouts, cherry tomatoes, roasted herbs, and seeds - you will looooove it!
