Mac and Cheese

This is my daughter’s recipe. She just loves pasta in anything. Living in Germany for the majority of my years, Mac and Cheese was not really a part of our diet. But after meeting my American husband, we were introduced to some dishes that are common in the United States and this is the veganized version of one. The cheese is made of cashews or can even be bought ready and vegan in many stores. I prefer to make a cashew-based cream sauce for the Macaroni.

This recipe is our easy to make but super tasty version. All you need are a couple of preparations, such as soaking the cashews for 8 hours.  Also, you can eat this as a side with any other dish you like or just so! I usually want to have some veggies, and my family loves mock-meatballs. You can find these at many grocery stores.  

To make this quick dish, I just throw some small cut onion and garlic in a hot pan with a little oil and some spices. After the onions are light brown, I add the mock-meatballs and frozen peas. When almost cooked, I add some canned (drained) chickpeas, let it cook for another couple minutes, and top everything with cut scallions. That easy! And because it can be a bit annoying then to have to scroll forever to find the recipe…. Here you go:

Ingredients

  • 1 pack (454g/16oz) macaroni
  • 1 cup cashews (unsalted, preferably raw), soaked in cold water for 8 hours or overnight
  • 1 cup of soy milk
  • 1 small to medium onion
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp onion salt
  • 1 tsp garlic powder
  • 2 tsp nutritional yeast
  • 0.5 tsp ground nutmeg

Instructions

Cook the macaroni according to instructions on package add 1 tsp salt (or more to taste).
In the meantime, prepare the sauce:

-drain the cashews and rinse with cold water

-place the cashews and the rest of the ingredients in a blender and blend until very
smooth.

-once the macaroni is cooked al dente:

- drain the water and pour the sauce over the cooked Macaroni cook for another minute, stir well. Add some salt if needed and serve immediately.

This is our favorite way to make it. But you can also bake it in the oven after the last
step:

Place the Mac and Cheese in a baking dish and bake in the preheated oven until golden
brown (approx.15 min at 180°C/350°F)
